Breakfast for dinner


Hey there, 
So my roomate and I were trying to decide what to eat for dinner and we got up pretty late today and missed breakfast. Our solution ... BFD breakfast for dinner, whats better!?! While I love brunch the pancakes, eggs, bacon, fresh fruits, toast, and everything else to go with ... lets be real, we are broke. So our breakfast for dinner is eggs and pancakes. But we added a bit of a twist to both. 

For our pancakes, we added some nutella spread. Nutella is something we have on hand normally (in case you didn't know nutella and peanut butter sandwiches are divine, and cheap) 

For our eggs we had some fresh ingredients on hand that were about to go bad, peppers, onions, we also rummaged through our fridge to find a package of bacon and some cheese.

So what you will need: 
Pancake mix 
5 eggs 
1/2 a pepper
3/4 onion 
1 tomato
1/4 cup shreaded cheddar 
2 or three pieces of bacon cooked and crumbled 


Alright so I started with chopping up the veggies into small cubes.
And then I put them in the pan to saute a bit.
While that's cooking mix together the pancake mix, try adding a bit of cinnamon to it for more flavor.
After everything has been sauteing for a bit its time to add the eggs. Crack 'em into a bowl and mix it up, add some milk and if you have it a bit of dried dill.





(Here you can add more or less eggs depending on the amount of people your cooking for)









Add that to the pan and let it cook for a bit.


While the eggs are cooking get another pan and start cooking those pancakes.



Follow the directions on the box of pancakes, when they bubble, time to flip!













While your cooking your pancakes your eggs will continue to cook when they are almost done you can add your tomatoes and cheese.
 After all of that your eggs and pancakes should be done! What we did was took the nutella and sandwiched our pancakes like a sandwich in it.

Add some syrup and enjoy your BFD!

Pasta Salad

Hey guys! So I was shopping today and I found this really cheap pasta creation thing from Betty Crocker called suddenly salad! I thought it sounded good so I decided to try it. 
All you need: 
Suddenly Pasta Salad Ranch and Bacon
Mayonaise 
Tomatoes 
Scallions


Start with boiling the noodles, while those are on the stove dice up your tomato and scallions

After the noodles are boiled mix together the powered mix and the required amount of mayonnaise along with the diced tomoatoes and scallions. 
When the noodles are done boiling mix everything together and chill in the fridge for about an hour.


Once it has chilled serve and eat! I found that this makes a good amount and is easily refrigerated. You can put it alongside some chicken or salad or just enjoy it by itself! 

It was delicious!! I will definitely get this again.

Ice Cream Brownies

Hey all!
So for this week I was once again craving some good old fashioned dessert. My roommate gave me the idea of brownies and ice cream and it sounded so good! So here is what we started with: 
Brownie mix (pick your poison, hundreds of brownie mixes out there and they are all good!)
Vanilla Ice Cream





So follow the recipes on the back of the box. If you buy the original supreme I would recomend only mixing in half of the syrup. 


Pour in half the batter to the pan then pour in the rest of your syrup and the brownie mix on top of that. 
 
Finally bake and when it comes out all nice and warm ....

 Cut and serve with ice cream .... enjoyyy!!!

Fried Rice

Hey there! So today I was feeling in the mood for Chinese and I decided to make my own fried rice. All you need: 
Rice 
Frozen mixed veggies 
1 egg 
soy sauce 

So for the rice I used the minute brown rice that you stick in a bowl in the microwave for about 10 minutes so that the first thing to do!  
While that's cooking go ahead and throw some veggies into a big fry pan. The directions on the bag have you put it in some water but the water from the frozen veggies should be enough to cook them. 

After the veggies are cooked clear a little spot in the pan and throw your egg in. 

Once its cooked mix it through your veggies and throw the rice in!
Mix everything together and let it sit for about 5 minutes to fry it a bit. Also throw some soy sauce in on top of the rice. After a couple more minutes take out of the pan and serve. 
 Homemade fried rice!!
